DEHAY: 4 Quick & Easy Keto Desserts

Intro

Just because we eat a proper human diet doesn’t mean we have to give up our sweet tooth! Low carb desserts are so satisfying because healthy proteins and fats increase satiety and pack in vitamins and minerals. Plus, they don’t spike blood sugar or leave you bloated and water-logged like sugary, junky desserts do. Let’s dig in!

Lemon Bars

The best fruity desserts strike a delicate balance of sweet and tart – and lemon bars are no exception. With only three carbs per square, they’re sweet enough to cut through the lemon’s brightness, while still allowing the citrus to shine through. With a soft crust and jammy center, these lemon bars are the star of the show!

Makes 26 squares

Ingredients

Crust:

  • 1 ¼ cups (125g) almond flour
  • ¼ cup powdered keto sweetener of choice (like allulose or monk fruit)
  • ¼ tsp salt
  • ¼ cup (56g) unsalted butter, cubed

Filling:

  • 3 whole eggs
  • 2 egg yolks
  • ¼ cup granulated keto sweetener of choice
  • ¼ cup powdered allulose
  • ¼ tsp salt
  • 1 tsp lemon zest
  • ⅓ cup lemon juice
  • 2 TBS coconut flour
  • Powdered keto sweetener, for garnish

Directions:

  1. To make the crust, preheat the oven to 325 F. Line an 8″x8″ baking pan with parchment paper.
  2. Place the almond flour, sweetener, salt, and cubed butter into a food processor or blender. Blend for a few seconds, until fully combined.
  3. Press firmly into the baking pan and place in the oven for 12 to 15 minutes, until golden brown around the edges. Allow to cool while preparing the filling.
  4. In a large bowl, whisk the whole eggs, egg yolks, sweetener, and allulose. Add the salt, lemon zest, and lemon juice. Add the coconut flour and mix until fully combined.
  5. Pour lemon batter onto the crust. Place back in the oven for 30 to 35 minutes, until the filling is set but not at all browned.
  6. Allow to cool completely. Top with sifted powdered sweetener and enjoy! Can be stored in the fridge or enjoyed in a few days at room temperature.

Chocolate Chip Cookies

It’s taken me forever to find a reliable keto cookie recipe that isn’t crumbly or overly greasy. But these? They’re the real deal – crispy on the outside and chewy on the inside.

Makes 24 cookies

Ingredients:

  • ½ cup butter, softened
  • ½ cup granulated keto sugar replacement (monk fruit erythritol blend)
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 ½ cup almond flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 tsp xanthan gum
  • ½ cup keto chocolate chips

Directions:

  1. Preheat the oven to 350 F. Line a baking sheet with a silicone mat or parchment paper.
  2. Using a hand mixer, place softened butter and granulated sugar replacement in a large bowl and mix until creamed together.
  3. Add the egg and vanilla extract and continue mixing until fully combined.
  4. Measure in the almond flour, baking powder, salt, and xanthan gum. Continue mixing until completely combined.
  5. Fold in the chocolate chips.
  6. Drop 24 equally sized heaps of dough onto the baking sheet.
  7. Bake for 14-15 minutes until done. Right out of the oven, gently press down on the cookies to flatten.
  8. Allow to cool completely and enjoy!

Chewy Toffee

Crunchy, chewy sweets can be so satisfying for munching. This keto version contains zero added sugar and just 1g net carb per serving.

Makes 16 squares

Ingredients:

  • 1 cup (224g) unsalted butter
  • ¾ cup + 1 TBS (165g) powdered allulose
  • ½ tsp sea salt (plus more to taste)
  • 1 tsp vanilla or butterscotch extract
  • 1 cup keto chocolate chips

Directions:

  1. Line an 8″x8″ pan with parchment paper and set aside.
  2. Heat a large pan over medium-low heat. Add butter, allulose, and salt. Stir frequently until butter melts.
  3. Continue heating until mixture reaches 270 F and has turned a rich caramel color. Remove from heat and stir in the extract.
  4. Pour butter mixture into the prepared pan. Sprinkle the chocolate chips evenly over the mixture and allow them to melt for a few minutes.
  5. Use a spatula to gently spread the chocolate over the top of the butter mixture. This is the perfect time to sprinkle with flaky sea salt, if desired.
  6. Place in the fridge or freezer until completely set. Cut into squares and enjoy!

Feel free to toss in some chopped pecans if you like. They keep beautifully in the fridge for weeks – or up to a year in the freezer. Carbs? Never heard of ’em.

Chocolate Mousse

Chocolate mousse is one of the most luscious and decadent desserts around! Without all the sugar, it can be quite a healthy treat. This keto version delivers all the richness with only 5 ingredients.

Makes 6 servings

Ingredients:

  • Heaping 2 tsp gelatin (7-9 grams)
  • ¼ cup cold water
  • ⅓ cup boiling water
  • ½ cup powdered keto sweetener of choice
  • ⅔ cup cocoa powder
  • 2 cups cold heavy whipping cream
  • 2 tsp vanilla extract

Directions:

  1. Add the cold water to a small bowl, then sprinkle the gelatin over the top. Give it a quick stir and allow it to sit for 5 minutes.
  2. Meanwhile, boil the water. Add boiling water to the gelatin mixture and stir until the gelatin is completely dissolved. Allow to cool while you make the rest of the mousse.
  3. In a large bowl, add sweetener, cocoa, whipping cream, and vanilla.
  4. Beat on medium speed with a mixer, scraping the bowl occasionally to ensure everything is well combined.
  5. After the mixture is stiff, pour in the gelatin mixture. Continue whipping until blended.
  6. Spoon into 6 dessert glasses and allow to sit in the fridge for at least 8 hours (ideally overnight).
  7. Garnish with chocolate shavings, whipped cream, or fresh fruit. Enjoy!

You don’t need to give up sweets to eat healthy. By swapping processed sugar and carbs for low carb, whole foods, you can prevent nasty insulin spikes, blood sugar crashes, and inflammation. These keto desserts are simple, quick, and healthy. Yes, please!
